零失敗!蒸水蛋(附食譜)

不知大家有否試煮之前post的清湯腩,不過如果你喜歡吃蛋,又喜歡簡單,兼喜歡家常菜,這道蒸水蛋不能不試。



Well,昨晚post了這張蒸水蛋的照片,不消數小時,相片下多了80個like。

有說:「未見過這麼滑的水蛋唷!」

(羞)獻醜了。

我曾經是一個蒸蛋白癡,蒸親不是「豆皮」,就是水汪汪不夠熟。

有次訪問便向海景嘉福酒店海景軒的行政總廚梁師傅取經,之後從未失手,呵呵呵呵!

來,看食譜吧。

蒸水蛋(2人分量)

食材:
3隻蛋
雞湯(將3隻蛋倒落食飯碗度應該差不多滿,加同等分量之雞湯,驚太咸就一半雞湯一半水,驚MSG就全加水吧,下些鹽巴就好了~~)

做法:
1. 將蛋攪拌好,混和雞湯拌勻,倒進深度較淺的碗,最好是薄身的(有時間請過篩來倒,濾走打不勻的蛋白)。
2. 面層裹上保鮮紙,放進滾水,放蓋蒸7-8分鐘,途中不時打開蓋約3次(打開1、2秒蓋返便可),成!

記得,那厚薄均一的碟和開蓋是重點啊~~~

以後,你不會再在街外吃蒸蛋了....... 就除了在海景軒~ :p
